Buffalo Balls

Dinner tonight was interesting. The boys went to a movie with a friend who was coming over afterward for dinner and to spend the night. Their movie ended 20 minutes after I had plans to be somewhere. Luckily, the plans were just to go sit with some friends who were having dinner out (I refuse to eat at this place because a) they have given me food poisoning twice and b) I can't trust them to not poison me, so I sure as hell don't trust them to not gluten me... but I love hanging out with my friends, so I went and drank iced tea.) so I could go anytime. That still left the task of feeding 4 teenage boys something semi-healthy that could be made ahead so they could eat while I wasn't home.

Enter Buffalo Balls.

Buffalo balls are like regular meatballs, only smaller, and covered in wing sauce instead of tomato sauce. :o)

2 1/2 lbs ground turkey (93/7)
1 large minced onion
6 cloves minced garlic
1 cup oatmeal (pulsed in food processor until small)
2 eggs
2 1/2 T paprika
2 1/2 tsp oregano
2 1/2 T dried parsley

Mix all ingredients. Make small (1 inch) meatballs. Bake at 350 for 15 minutes.

Meanwhile, make wing sauce.

1 stick butter, melted
3/4 c Franks red hot sauce

Once the meatballs are done, cover with sauce. If you are a wimp like me, they are tasty with regular old BBQ sauce, too.

Before I left, I threw some brown rice in to the steamer and made a vegetable tray with baby carrots, broccoli, celery sticks and fat free Ranch dressing.

Honestly, if we are not having a party, I will make these in to burgers instead of meatballs.

that sounds good-I've made asian meatballs before using turkey and sweet/sour sauce....might have to try that spicy sauce though...
